fruit & seaweed salad

Summertime is here, and it's the perfect season to enjoy fresh and light salads that can keep you cool and refreshed. This fruit & seaweed salad with watermelon and blueberries is a perfect dish to beat the heat while also getting a good dose of essential vitamins and minerals. In this blog post, we will explore the health benefits of the ingredients used in this recipe and why it's worth adding to your summer menu.

We made this several times throughout August this year with delicious, juicy watermelon from the market, blueberries from the field at our house, and our Organic Alaria Flakes, straight from the farm of course. Takes no time at all and can be made with other fresh fruits, cheeses, herbs or flowers. 

Watermelon, the main ingredient in this salad, is not only delicious but also a great source of hydration. It's high in vitamins A, C, and potassium, and its high water content makes it a perfect choice for the hot summer months. In addition, watermelon has anti-inflammatory properties that can be beneficial for those with joint pain or arthritis.

Blueberries are a nutritious addition to this salad that add both flavor and health benefits. They are loaded with antioxidants, fiber, and vitamins C and K, making them a great choice for overall health and well-being. These tiny fruits are also low in calories, making them a great addition to any diet.

Seaweed is a highly nutritious ingredient that is often overlooked in western diets. It's a great source of iodine, a mineral that is essential for maintaining a healthy thyroid. Additionally, seaweed is high in fiber and has anti-inflammatory properties, making it a great addition to a healthy diet.

 

Prep Time: 5 mins

Makes: 2-3 servings

 

You'll Need: 

2 cups of cubed watermelon

1/2 cup of fresh blueberries

5 tbps of honey goat cheese (optional)

1 tbsp Organic Alaria Flakes

1 tbsp of olive oil

Salt & pepper to taste

 

Directions:

Rinse blueberries and add to salad bowl. If you haven't already, cube or cut up your watermelon into bite sized pieces. 

Next, add honey goat cheese, or a goat cheese of your liking. You can substitute another cheese as well. 

Sprinkle Organic Alaria Flakes on top of the entire salad along with olive oil. 

Stir together gently and serve.
