apple & kelp handpies

We may have been guilty of consuming way too many of these adorable mini apple pies fresh out of the oven, but with so few ingredients, and little sugar, we didn't regret it. This recipe combines the sweet and tart flavor of apples with the rich, umami taste of kelp for a delicious and nutritious treat that's perfect for any time of day.

We used our Organic Sugar Kelp Flakes in this recipe, but Sugar Kelp or our Organic Alaria Flakes will do.

Apples are well-known for their health benefits, including being a good source of fiber, vitamins, and antioxidants. As the saying goes - an apple a day keeps the doctor away. In this recipe, we've paired them with brown sugar kelp, a type of seaweed grown off the coast of Maine that's packed with essential nutrients like iodine, iron, and calcium. Kelp is also high in protein and contains a variety of vitamins and minerals that are important for overall health and wellness.

The combination of apples and kelp in these hand pies makes for a lovely and nutritious snack that's perfect for busy individuals on the go. They are also a great option for kids and adults alike who want to enjoy a healthy and tasty treat.

These mini pies can be made with a homemade pastry dough, pie crust or with a store bought option. You can also make an entire pie if you prefer that! We like to reheat these on an autumn afternoon with a side of vanilla ice cream. They can also be eaten at room temperature. 

 

Prep Time: 2 hrs

Makes: 8-10 mini pies 

 

You'll Need: 

Crust: 

2 cups of all-purpose flour 

1 tbsp of sugar 

1/2 tbsp of Organic Sugar Kelp Flakes 

2/3 cup of butter 

1/3 cup of ice cold water 

1 egg 

 

Filling:

2 cups of tart apples

1/4 cup of sugar

1/2 tsp of ground cinnamon

1/4 tsp of nutmeg

2 tbsp of cornstarch

1/2 tbsp of Organic Sugar Kelp Flakes 

 

Directions: 

If making your crust from scratch, start by adding flour, sugar and Organic Sugar Kelp Flakes into a large bowl and stir until ingredients are combined well. Add chilled, cubed butter and mix until flour is crumby and butter is well distributed. You can also do this with a food processor. 

Stir in ice cold water and mix until you have a dough. Cover dough and put into the fridge for 1 hour while you prep the other ingredients. 

For the filling, begin by peeling apples and finely chopping them. In a large bowl combine chopped apples, sugar, ground cinnamon, nutmeg, cornstarch and Organic Sugar Kelp Flakes. Mix well.

Heat a small amount of butter in a large skillet and add apple mixture. Cook apples over medium heat until the apples become tender (about 8-10 minutes). 

Remove from heat and set aside. Next, take your dough out of the fridge and roll it out. Roll until your dough is your preferred crust thickness and cut out circles that are approx. 6-7" inch across. 

Add 1-2 tablespoons of the apple mixture into the center of your mini crusts and brush edges with egg wash. Fold over the crust and seal with a fork by pressing the fork around the edges. 

Place mini pies on parchment paper and refrigerate for 20 minutes. Preheat the oven to 375 degrees. 

Remove pies from the fridge, brush with egg wash, sprinkle with sugar and Organic Sugar Kelp Flakes once more, and place into the oven for 20-25 minutes or until golden brown.

Let cool and enjoy!
